A Little Southwest CookbookThe Southwest of America has a cuisine strongly rooted in very old Native American, Spanish and Mexican traditions. The food is earthy and robust, romantic and expressive: it includes such flavourful ingredients as oregano, cinnamon, garlic, pine kernels, avocados, cheese and chillies. Also native to the Southwest and an integral part of dishes such as Corn Soup, Refried Beans and Blue Corn Bread are beans and corn. A delicious selection of recipes also shows that tortillas are almost as important in the Southwest as they are in Mexico: Quesadillas, Tortilla Casserole and Burritos.
