A Little Dutch CookbookThese traditional recipes of Holland, handed down over hundreds of years from mother to daughter, draw attention to the richness of produce from the Dutch countryside and coast, and to the healthiness of Dutch appetites. From the seas and dykes come the fish and seafood for dishes such as Mussels with Cheese and Haddock in Mustard Sauce; from the countryside, the vegetables for soups such as the aptly named Stallion Soup and fruit for the delicious dessert, Fruit Flan; and from the farms, the meat and poultry for nutritious hot-pots and stews.
